    Eryngium campestre 

    'Field Eryngo'

    Apiaceae: a perennial, similar to Sae-holly, but it has yellowish green, narrower, more deeply divided leaves and the flowers are smaller, in umbels, blooming from June-July. It grows on dry ground, often near the sea, and is regular at a site near Plymouth, elsewhere in the country it is rare. Native to Central and southern Europe, including Britain, from Northern Germany to North Africa and Afghanistan.

     

    USES:

    The young shoots can be cooked as an asparagus substitute. The root can also be cooked and used as a vegetable or candied and used as a sweetmeat.

    The root has antispasmodic, aromatic, diaphoretic, diuretic, expectorant, galactofuge and stimulant properties.

     

    GROWING INFORMATION:

    The seed can also be sown in spring. It usually germinates in 5 - 90 days at 20°c. When they are large enough to handle, prick the seedlings out into individual pots and grow them on in the greenhouse for their first winter. Plant them out into their permanent positions in late spring or early summer, after the last expected frosts. Requires a well-drained soil and a sunny position. Plants should be put in their final position whilst small since they resent root disturbance.
